Ingredients

1 kg herring fillets

Marinade
600 ml water
200 ml vinegar (12%)
30 g salt

Pickling liquid
300 g Dansukker Granulated Sugar
30 ml white peppercorns, crushed
30 ml grains of allspice, crushed
30 ml lemon pepper
2 bay leaves, crumbled
2 large onions, diced
2 large red onions, diced
1 large bunch dill, chopped

Instructions

A southern Swedish classic from Brantevik in Skåne.

Rinse the herring in cold water. Combine the ingredients for the marinade. Leave the herring fillets in the marinade for 24 hours. Drain the herring. Combine all the ingredients for the pickling liquid. Put the drained herring in a tall glass jar and cover with the pickling liquid. Leave to pickle in the fridge for 2 days.
